Since 1993, William Fèvre, the famous vintner of Chablis in Burgundy, produces exceptional wines in his Chilean Estates. He is one of the first and only ones to produce at high altiktude in what now is called the new D.O. Maipo Vallley - Andes in Chile. Low temperatures and a mix of coluvial and aluvial soils gives complex, elegant and fresh wines.

Espino is a Chilean acacia present in austere and dry terroirs, in altitude. It is also a word plaing with the last name of the Chilean Partner of Mr. F?vre, Mr. Victor Pino. In spanish the word ES means IS.

Fermentation and Maceration:

Once the grapes from the Chardonnay vines are harvested, they are pressed using what some call the ‘Champagne’ method. This process involves pressing the entire bunches very gently, separating the ‘Cuv?e’ (first juice) and the ‘taille’ (final pressing). The two juices are fermented separately using without SO (Oxidative method) in stainless steel tanks for ten to fifteen days at 16 to 18?C. Some lees are present in the tanks, but there is little battonage type work stirring the lees in this wine.

Aging:

Afterward part of the juice (10%) is tasted and selected to be aged in French Oak barriques (second to fourth usage) for about six months.
